Loretta Mensah is the founder and editor—she writes every recipe, tests every method, and keeps the kitchen running.
A day in the kitchen
- 15:40 a.m.
The coffee’s brewing while I pull out the dough for the day’s focaccia. The yeast is sluggish—it’s too cold in the kitchen, and the first batch won’t rise properly. I’ll try again in an hour.
- 28:30 a.m.
The school run is done, and now I’m back at the stove, making a simple tomato sauce for tonight’s dinner. The kids are still asleep, and the house is quiet enough to focus. The sauce simmers too fast—I’ll turn down the heat before it reduces to nothing.
- 312:15 p.m.
Lunch is a sandwich, eaten at the counter while I flip through the week’s recipe ideas. The fridge hums, and the only sound is the occasional clatter of a pan. Nothing interesting happens here—just planning.
- 43:47 p.m.
The chicken for tonight’s main dish is thawing, but the bag leaks all over the counter. I wipe it up, but the floor is still sticky. At least the meat is ready when I need it.
- 5The hour before dinner
The kitchen is a mess of spices and half-used pans, but the garlic butter for the roasted chicken is finally ready. The kids are home, and the table is set. The sauce from earlier is still salvageable—I’ll stir it one more time before serving.
The only thing I won’t compromise on is taste. If a dish doesn’t sing, it doesn’t stay.
The rules we hold ourselves to
We don’t cut corners, but we do keep things simple. Here’s how we work.
No shortcuts—we cook, tweak, and cook again until it’s right. The first version is always the worst.
Not just ‘add salt,’ but *how much* and *when*—so you can adapt it to your kitchen.
No sous-vide, no specialty gadgets—just what you can do with a good knife and a stove.
What we still get wrong
We’re still not great at photographing food in natural light—most shots are taken in the middle of the day when the kitchen’s harsh. We’re switching to a proper lightbox soon.
Our archives are messy. Old recipes get buried under new ones, and we’re building a better search system to fix that.
